Ingredients

- 1 cup grated carrots (about 2 medium carrots)
- 1 cup grated apple (about 1 large apple; core and seeds removed)
- 1 cup oat flour (or use whole wheat flour as a second choice)
- 1 egg
- ½ cup unsweetened applesauce (optional for moisture)
Instructions
- Preheat oven to 350°F (175°C).
- Mix grated carrots, grated apple, oat flour, egg, and applesauce in a bowl.
- Form small balls from the mixture and place on a baking sheet.
- Flatten each ball slightly with a spoon.
- Bake for 15-20 minutes until golden brown.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- For a vegan version, replace the egg with a flax egg.
- Adjust sweetness by adding a teaspoon of honey or maple syrup.
